Keep your FLAC files
FLAC is lossless, meaning it keeps every detail of the original recording. MP3 is not. Converting is a sensible way to make copies for a phone or a car, but keep the FLAC files as your originals, because you cannot convert back and regain what MP3 left out.

No. The work happens inside your web browser, on your own device. You can check: once this page has loaded, switch off your internet connection and it will still work. The page also tells your browser to refuse to load anything from, or send anything to, any other website, so nothing can be sent elsewhere even by accident.
